are these tail lights fairly easy to install?

Yes. They take about 40 minutes or so. +1 for test it before putting everything back together. I saved myself a little extra time and some headache this way.

You can use the stock tail if you'd like, otherwise you can ebay "fz8 tail tidy" or "fz8 fender eliminator" and you'll get a lot of results

Some sort of fender eliminator is the way to go. It really cleans up the back of the bike. I'll probably just pick up or make a small bracket for the plate, ive seen a handful of threads where it was done and it seems easy enough
